You can find answers to some of the questions you've been wanting to ask (and perhaps some questions you haven't even thought of!) at the website of the OCA Cathedral in Boston.
Isabel Florence Hapgood, in 1906, compiled and translated from Church Slavonic into English almost all of the orders of service used by the Orthodox Church. That very useful work is now in the public domain and is available for download, for personal, non-commercial use, as a PDF document from this website.
Please note that this is a rather large file, approximately 15 meg, and will take a bit of time to download, so you may want to save the downloaded file on your own PC for quicker reference in the future.
